Feast on Chicken Fajitas!

We always look forward to fajita night! I spread all the fixin's out on the table and let everyone build their own...Yes, it creates a huge mess, but it brings a little fun to the dinner table. Nothing beats sour cream smiles and guacamole giggles! Enjoy this festive dinner and switch up your Taco Tuesday with a Fajita Friday!

1 Packet of fajita seasoning - Old El Paso is the brand we use.

2 tbsp olive oil

1 Medium white onion

1 Large red pepper

1 Large yellow/orange pepper

1 Large green pepper

Juice of 1 lime

1lb Chicken breast cut into bite sized strips*

Tortillas

First, preheat your oven to 400 degrees.

Then, slice up all of your veggies. I like to slice them very thin because that's how my girls like them. Also, this is something that you can do the night before to save a little time if you are a busy family like us. Place the veggies in a 9x13 baking dish, and then place your chicken breast (already cut into strips) right on top of your veggies.

Now, sprinkle the fajita seasoning right on top, and drizzle on the olive oil. I hope you don't mind getting your hands messy, because now you need to get your hands down into the chicken and vegetable mixture and toss so that everything is nice and coated with the seasoning and oil.

Once everything is evenly seasoned, drizzle half of the lime juice on top. Place the dish into your oven, and bake for 40 minutes.

Time for some fun! I like to put the 9x13 right on the table along with sour cream, shredded cheese, lettuce, tomato, HOMEMADE GUACAMOLE, rice, black beans, and tortillas to let everyone build their perfect fajita. We always serve this with chips, salsa, and nacho cheese.

*Also, if you want to switch it up, feel free to add shrimp to the chicken or substitute the chicken altogether with fresh shrimp. Just add it, and mix to season as mentioned above.
