Rockamole - Guacamole that ROCKS

My daughter Hazel has always called Guacamole"Rockamole", and I promise this recipe will rock your socks off. This is a perfect side to serve with your tacos or fajitas, and it is sure to impress your guests served as an appetizer accompanied by lime flavored tortilla chips. So, whether you call it Guacamole or Rockamole I hope you enjoy this creamy dip!

3 RIPE avocados - They should be soft and the skin should be brown.

3-4 tbsp of finely chopped cilantro - We can never have too much cilantro!

1 tsp minced garlic - I buy this pre-minced in a jar from the produce section at the grocery store

Juice from 1 lime

1/4 of a red onion finely diced

1 Roma tomato - gutted and finely diced

1 Seeded jalapeno finely diced - I leave this out when I make this for my kids.

Salt

Pepper

Smoked paprika

We like our Guacamole with some chunks. I like to throw the meat of the avocado into a plastic Ziplock bag and squeeze to mush it all up, but not so much that it is smooth. If you prefer a smooth guac, then use a food processor or my baggie method, and smash it smooth.

Add the avocado to a bowl along with the red onion, tomato, cilantro, garlic,and jalapeno. Stir it all up until well mixed. This is where you can customize your recipe. I use a lot of lime juice to give it some tang, but if you want less, add a little and taste test. Sprinkle in some course salt and a dash of pepper and mix again. Put it into a serving bowl, and sprinkle with a dash of paprika. Serve with tortilla chips. Enjoy!
