Meatloaf

Meatloaf is so taboo. No one wants to admit how much they love it. That's about to change! This meatloaf recipe is so good you won't duck your head and change the topic when someone asks, "What are you having for dinner?" Instead you will shout "MEATLOAF!!!" and forward them my website, so they too can try this yummy comforting dish!

Loaf:

1 lb Ground beef

1/2 lb Ground pork

2 Eggs beaten

1/2 c Milk

2/3 c Bread crumbs

1/4 c Diced onions

2 tbsp Fresh minced parsley

1 tsp Dried basil

1/2 tsp Minced garlic

A dash of salt and pepper

Sauce:

1/2 c Ketchup

4 tbsp Brown sugar

2 tsp Dried mustard

Preheat oven to 350 degrees.

To start off, put all the loaf ingredients in a large bowl. Now, if you are like me and hate getting your hands messy, call in your kids and let them go crazy mixing and mashing all the ingredients together with their tiny little kid hands! Otherwise, use your own hands to mix.

Once all the ingredients are well mixed, grease a loaf pan and place the meat in the center, forming it to the pan. Use a spoon and go around the edge of the meat loaf and press down so that the loaf is taller in the center and slants down to the edge. This will make sure all the grease and juices don't set on top but pool around the edges.

Place the pan in the oven and cook for 1 hour to 1.5 hours.

Meanwhile, prepare the sauce by adding all the sauce ingredients in a bowl and whisking until smooth.

Once the meatloaf is done, take it out of the oven, and drain the grease off (be careful not to flop the meat into the sink while doing this... it has been known to happen). Once it's drained, spread half the sauce on top and place back into the oven for 10 more minutes.

When the timer goes off, take the loaf out of the oven and let it cool for 10 minutes. Cut it into some nice thick slices and enjoy the finest comfort food!

If you have leftovers, our favorite next day meatloaf recipe is simple. Take a slice of meatloaf, place it in a greased skillet and get it nice and hot. The two sides should brown evenly and add a nice crisp. Top it with a slice of American cheese and put it on a hamburger bun. Then, chow down on that delicious sandwich!
